The myths explained on what is the difference between a Spiral Mixer and a Planetary  Mixer?

Before you decide to purchase your mixer you need to consider what you are going to use it for.

The most common types of commercial mixers are Planetary and Spiral mixers but understanding the difference between them can save you replacing equipment again in 12 months’ time.

 

Spiral Mixers

Unlike a planetary mixer, a spiral mixer has a rotating bowl which spins while the spiral hook spins and kneads the dough in a more similar motion to hand kneading. This produces less friction and less heat on the dough, ensuring proper temperature for fermentation and speeding up dough development 20%-30%.

Bowls will rotate in a spiral mixer in comparison to the fixed bowl in the Planetary mixer.

These are designed for heavier work and mixing of ingredients especially dough mixing.

This style of mixer will prepare dough much more quickly than its planetary counterpart.

Spiral mixers are a new type of kneader. Both the dough arm and bowl are running to be able to raise the mixing speed and efficiency greatly. The machines are equipped with a protective cover, are easy to operate and safe. They are easy to clean, suitable for mixing flour in hotels, restaurants and public canteens.

Planetary Mixers

 

These are available in counter top models or free standing.

Planetary mixers are given this name because of how the mixers revolve around the centre of the bowl like a planet around the sun. The bowl stays in place as the mixers cycle rapidly around.

The mixing implement, which can include a dough hook, paddle, or beater, actually rotates around the bowl

Unlike the Spiral Dough mixer these are suitable for lighter work.

Perfect for soups, sauces or gravy’s.

Fixed bowl so the arm will rotate to mix all the ingredients inside the bowl.

A common error among chef’s is to purchase a Planetary mixer for making dough and heavy mixing recipes.

 

As mixing dough puts more pressure on the mixer and in 12 months you will find your unit has burned out from its heavy work load.
